Coffee Pancake Recipe!

If you had to choose between a delicious, hot cup of coffee, and a warm, tasty, fluffy pancake - which would you choose? TOUGH decision, right?! Well, what if we told you that you didn’t HAVE to choose? What if we told you that you could have the best of both? YOU CAN! It’s no secret that here at Velo, we love our coffee - we can’t get enough of it! 

Coffee pancakes are fluffy and delicious, and taste just like your favourite cup of coffee! They’re perfect for any breakfast or brunch (or snack, dinner… anytime!) Between the prepping and the cooking, it only takes about 25 minutes to make these tasty pancakes. So, brew a cup of Velo (but save those grounds) and follow along with this recipe!

Ingredients:

  • 1 cup of all purpose flour
  • 1 tsp of baking powder
  • 1 tsp of baking soda 
  • 2 tbsp of sugar
  • ½ tsp of salt
  • 1 large egg
  • ½ cup of milk 
  • ½ cup of your favourite Velo coffee brewed and cooled to room temperature

We suggest something with flavours of chocolate and nuts, like our Morning Fixie blend! Or you can try one of our new micro-lots from El Salvador, like Las Mercedes Kenia Honey with delicious flavours of brown butter and toffee!

Once you have your ingredients, there’s a few easy steps to follow! One little trick we want to share with you first is to preheat your oven to just about 120ºC. That way, you can keep the pancakes warm as you make more! Ok, let’s start whipping up some pancakes!

In a medium sized bowl, sift together the flour, baking powder, baking soda, salt and sugar. Set this mixture aside once the ingredients are combined. In a separate bowl, whisk to combine the egg, buttermilk, and your Velo coffee! 

Next, using a spatula, combine the wet ingredients into the bowl of dry ingredients, and mix them together until they are combined. Preheat electric griddle or large, nonstick skillet over medium heat. Once hot, ladle ~1/4 cup batter onto the hot surface and spread to about a 5-inch diameter. After 2-3 minutes, bubbles will form on the top of the batter; flip the pancake and cook an additional 1-2 minutes. Repeat with remaining batter and serve hot, with a side of coffee!
