Velo Coffee and Caramel Slices

Buttery, coffee, caramel - YUM!

Thank you to one of our incredible customers, Gill's Bakes and Cakes, for this delicious Velo Coffee and Caramel Slice recipe! This recipe is super easy to follow, and you'll end up with a delicious, buttery, flakey pastry! With her La Specialista from De'Longhi, Gill brewed a cup of Velo coffee and made this masterpiece - you can too!

Here is what you need for Gill's recipe!

Ingredients:

  • 1 sheet puff pastry (280g)
  • 150g of icing sugar
  • 3 - 5 teaspoons of strong brewed Velo coffee (We recommend BMX!)
  • 15 grams of chocolate (maybe treat yourself and add a little extra!)

But wait... There's a twist! You need just a few extra ingredients to make the creamy centre of the dessert!

Ingredients: 

  • 300mls of double cream
  • 2 tablespoons of icing sugar
  • 1 teaspoon of vanilla
  • 3 tablespoons of caramel

This is gonna be a real sweet treat!

Once you have your ingredients ready to go, follow Gill's steps! Make sure you preheat your oven to 200ºC (180ºC fan). Next, line a baking tray with baking paper. 

Be sure to remove your puff pastry from the refrigerator at least 10 minutes before you use it! After the pastry sits, roll it out and cut down the centre to give you two long strips of pastry. Cut each half into 9cm X 4cm strips. Place the strips onto a baking tray with a small gap between each, and then prick with a fork. Place another baking paper on top, and then another baking tray on top as well to stop the pastry from puffing up. 

Coffee and Caramel Slices

Once the above steps are done, bake for 18 - 20 minutes until golden brown and then let cool completely.

While you wait for the pastry to bake and cool you can prepare your icing!

Brew the coffee and set it aside to cool, and melt the chocolate as well! In a small bowl, add your icing sugar, the coffee (1 teaspoon at a time) until you get a thick but runny icing. You can use a spoon or a piping bag to top the pastry sheets with a layer of icing!

Then, using a spoon or piping bag, drizzle the melted chocolate on top of the icing and then feather using a toothpick! Leave to harden for about 20 minutes!

These are best consumed on the day of making, and be sure to keep them in the refrigerator!
